Homemade Beet Latte with Fresh Red Beets

Ingredients- 1 fresh red beet
- 2 Tbsp extra virgin olive oil
- 1/3 Tbsp sugar
- 1 Tbsp whole grain mustard
- 1/2 Tbsp apple cider vinegar
- 1 Tbsp fresh lemon juice
- A pinch of freshly ground black pepper
Cooking Instructions
Step 1
First, thoroughly wash the red beet to remove any dirt and then peel it. Next, slice the beet as thinly as possible or julienne it. Slicing thinly will help with moisture removal and better absorption of the dressing.

Place the thinly sliced beets in a bowl and sprinkle with a little salt. Let them sit for 10 minutes to salt cure. This process draws out excess moisture from the beets, improving their texture and reducing any potential bitterness.
