Roll Ingredients

  • 1/2 cucumber, thinly julienned
  • 2 eggs
  • 3 sticks imitation crab meat, shredded
  • 2 Tbsp mayonnaise
  • 1 tsp sugar
  • Pinch of salt
  • 3 sheets of nori (sushi seaweed)
  • 2 bowls of cooked rice
  • 3 Tbsp tobiko (flying fish roe), rinsed
  • 1/2 ripe avocado, peeled, pitted, and thinly sliced
  • 1 Tbsp cooking oil

Sushi Vinegar (Rice Seasoning)

  • 2 Tbsp rice vinegar
  • 1 Tbsp sugar
  • Pinch of salt

Cooking Instructions

Step 1

In a bowl, combine 2 bowls of warm cooked rice with the sushi vinegar ingredients: 2 Tbsp rice vinegar, 1 Tbsp sugar, and a pinch of salt. Gently mix with a rice paddle, being careful not to mash the rice grains, to create a flavorful sushi rice base.

In a separate bowl, gently mix the shredded imitation crab meat (3 sticks) with 2 Tbsp mayonnaise, 1 tsp sugar, and a pinch of salt until well combined. This seasoned crab mixture will be a delightful filling.

Heat 1 Tbsp cooking oil in a non-stick skillet over medium heat. Pour in the beaten eggs (2 eggs) and cook, creating a thin omelet. Once set, carefully roll it up like a Swiss roll while still in the pan. Let it cool slightly before slicing.

Lay a sheet of nori (sushi seaweed) on a bamboo rolling mat or a clean plastic wrap. Spread the seasoned sushi rice evenly over the nori, leaving a small border at the top. Then, carefully flip the nori over so the rice side is down (this helps the rice stick better).

Arrange the prepared ingredients horizontally across the rice-covered nori: the seasoned imitation crab meat, the julienned cucumber, and the sliced omelet. Be mindful not to overfill, as it can make rolling difficult.

Lay a sheet of plastic wrap on your work surface. Arrange the thinly sliced avocado (1/2 avocado) in a single layer, covering the plastic wrap. Place the filled nori sheet on top of the avocado. Using the plastic wrap and the rolling mat, tightly roll everything up. Be gentle to avoid squishing the avocado.

Carefully unwrap the roll and slice it into bite-sized pieces, about 1.5 to 2 cm thick. Dipping your knife in water between cuts will help you achieve clean, neat slices without tearing the nori.
