First, let’s prepare the fresh spinach. Trim away any wilted or messy leaves, and lightly trim the root ends. If the roots are too thick, it’s good to trim them moderately to avoid nutrient loss. If the leaves are very large, you can cut them in half for a more manageable size, or make cross-shaped cuts in the thick leaves. This helps the seasoning to penetrate better and makes them more tender.

Now, let’s prepare the water for blanching the spinach. Fill a pot with plenty of water and bring it to a rolling boil. Once boiling, add 1 tablespoon of salt. Adding salt while boiling helps to enhance the spinach’s vibrant green color and also helps to neutralize any bitterness.

When the water is boiling vigorously, carefully add the trimmed spinach, starting with the root ends, and blanch for about 30 seconds. Be careful not to overcook, as it will become mushy and lose its texture. As soon as the spinach turns a bright green, get ready to remove it.

After blanching, rinse the spinach thoroughly under cold running water to wash away any remaining dirt, especially around the root ends. Rinsing in cold water cools down the spinach, helping to maintain its crisp texture.

Drain the rinsed spinach in a colander and squeeze out as much water as possible. You can gently squeeze it by hand, or place it in a wide bowl and press down with your palm to remove excess moisture. If too much water remains, the seasoning will be diluted, and the flavor will be less intense.

Place the squeezed spinach in a large bowl and add all the prepared seasoning ingredients. Combine the tuna extract, minced garlic, sesame oil, roasted salt, and sesame seeds. Adjust the seasoning to your taste. It’s recommended to taste and add more salt if needed, rather than adding too much at the beginning.
