Simple and Delicious Winter Greens (Yuchae Namul) Salad
Let’s make a simple and refreshing stir-fried rapeseed greens salad using winter greens. It’s a healthy and flavorful side dish that’s quick to prepare.
Main Ingredients- 300g Rapeseed Greens (Yuchae Namul)
- 1 Tbsp Doenjang (Korean fermented soybean paste)
- 1 Tbsp Sesame Oil
- 1/2 Tbsp Minced Garlic
- Sesame Seeds to taste

Step 1
First, let’s prepare the rapeseed greens. Carefully pick out any yellowed or damaged leaves. Rinse the greens thoroughly under running water to remove any dirt or debris. Bring a pot of water to a boil and add a pinch of salt to help the greens retain their vibrant color and crispness. Add the prepared rapeseed greens to the boiling water and blanch for about 1 minute. Be careful not to overcook them, as they can become mushy.
Step 2
Immediately after blanching, plunge the rapeseed greens into cold water. This shock helps to preserve their crisp texture. Rinse them several times in cold water to cool them down. Gently squeeze out as much excess water as possible with your hands. If there’s too much water left, the seasoning will be diluted. Cut the greens into manageable, bite-sized pieces, about three sections per stalk.
Step 3
Now, let’s make the delicious seasoning. In a bowl, combine 1 tablespoon of Doenjang, 1/2 tablespoon of minced garlic, and 1 tablespoon of sesame oil. Since Doenjang can vary in saltiness depending on the brand and fermentation, it’s best to add it gradually and taste as you go. If you prefer a little heat, you can also add 1/2 tablespoon of red pepper flakes (gochugaru) for a spicy kick.

Once the seasoning is ready, add the prepared rapeseed greens to the bowl. Sprinkle generously with sesame seeds. Gently toss and mix the greens with the seasoning using your hands until everything is well combined. Your flavorful rapeseed greens salad is now complete! Taste and adjust the seasoning if needed, adding a tiny bit more Doenjang or salt if necessary.
