Main Ingredients

  • 1/2 bunch fresh spinach (approx. 200g)

Seasoning

  • 1/2 tsp salt (or 1/2 tsp soup soy sauce, adjust to taste)
  • Sesame seeds, for garnish and flavor
  • 1 Tbsp sesame oil (for fresh aroma)

Cooking Instructions

Step 1

First, thoroughly wash the fresh spinach under running water. Pay special attention to the root part to ensure no dirt or debris remains. Bring a pot of water to a boil with a pinch of salt. Quickly blanch the washed spinach for about 30 seconds to 1 minute, just until the stems are slightly tender. Be careful not to overcook, as it can become mushy.

Immediately after blanching, rinse the spinach in cold water to stop the cooking process and preserve its vibrant green color and crisp texture. Gently squeeze out as much water as possible by cupping the spinach in your hands. Excess water can make the namul taste bland.

Chop the squeezed spinach into bite-sized pieces and place it in a bowl. Add 1/2 tsp of salt (or substitute with soup soy sauce), a sprinkle of sesame seeds for a nutty flavor, and 1 Tbsp of sesame oil for its fresh aroma. Gently toss the spinach with your hands to ensure all the seasonings are evenly distributed. Your delicious Sigeumchi Namul is now complete! It’s great to eat right away or can be stored in the refrigerator for a healthy side dish.
