Essential Ingredients

  • 1L Dashi Kombu Broth (soaked in cold water)
  • 1/8 Daikon Radish
  • 1/2 Onion
  • 1 stalk Green Onion
  • 3 cloves Garlic

Cooking Instructions

Step 1

Begin by pouring 1 liter of dashi kombu broth, which has been pre-soaked in cold water, into a pot. It’s important to soak kombu in cold water to extract its flavor gently; boiling it directly can release a slimy substance.

Step 1

Step 2

Add the prepared vegetables: 1/8 daikon radish, 1/2 onion, 1 green onion (preferably the white parts), and 3 whole garlic cloves to the pot. Simmer this mixture over medium-low heat for 20 minutes. This slow simmering allows the vegetables to release their full, delicious aromas and flavors into the broth.

Step 2

Step 3

Strain the broth through a fine-mesh sieve to remove all the solids, resulting in a clear and fragrant vegetable broth. This homemade broth can be stored in the refrigerator for 2-3 days and used as needed for various dishes.

Step 3

Step 4

Flavor Boost: Shiitake Mushroom Broth Variation: For an even richer and more complex flavor, add 3 dried shiitake mushrooms to the basic vegetable broth ingredients and simmer. The shiitake will impart a deep, umami-rich taste, making it perfect for soups and stews.

Step 4

Step 5

Refreshing Bean Sprout Broth Variation: Add a handful of fresh bean sprouts to the basic vegetable broth and simmer. This variation creates a wonderfully refreshing and clean-tasting broth, ideal as a base for hangover soups or stews, adding a bright and crisp note to your cooking.
