Step 1
This is the first step to storing your leftover bread fresh. Place the leftover bread into a zip-top bag or a sturdy plastic bag with a good seal. Make sure to remove as much air as possible before sealing it tightly. Then, place it in the freezer for about a day until frozen solid. This process will make the bread firm, which will be much easier for crushing or grinding in the next step.
Step 2
Now it’s time to put the frozen bread into the blender. Instead of putting the whole slices in, roughly break the frozen bread into chunks with your hands before adding them to the blender. Avoid filling the blender jar completely, as this can prevent proper grinding and strain the appliance. Aim to fill it about one-third full. Processing in batches will be much more efficient.
Step 3
Next, we’ll use the blender to grind the bread. Use the ‘chop’ or ‘pulse’ function, or operate the blender in short bursts to create coarse breadcrumbs. The key is not to grind it too finely; you want a texture with some small chunks remaining, resulting in moist, fresh breadcrumbs. The type of bread you use might slightly affect the texture and color.
Step 4
Once you have your moist fresh breadcrumbs, transfer them into a clean zip-top bag or an airtight container. Store them in the freezer. When you’re ready to use them, simply take out the amount you need and either let them thaw slightly or use them directly. You’ll be able to enjoy fried foods, like tonkatsu or cutlets, that are as fresh and delicious as if made with newly bought breadcrumbs.
