Easy Recipe for Homemade Chives Soy Sauce
A delicious, all-purpose chives soy sauce that keeps well in the refrigerator! Use it to enhance a variety of dishes.
Ingredients- Approx. 100g fresh chives
- 150ml regular soy sauce
- 1 Tbsp sesame oil
- 1 chili pepper (dried or fresh)
- 50ml mirin (rice wine)
Cooking Instructions
Step 1
First, wash the fresh chives thoroughly under running water. Ensure you remove as much moisture as possible. Patting them dry with paper towels is highly recommended. Once dried, finely chop the chives into lengths of about 5-6mm.
Step 2
Place the chopped chives into a clean glass container. Pour over 150ml of regular soy sauce, 50ml of mirin (to enhance the flavor and remove alcohol, you can gently heat the mirin over low heat until the alcohol evaporates, then let it cool before using), and 1 Tbsp of sesame oil. If you prefer a touch of spice, add one chili pepper (dried or fresh, seeds removed if using fresh) to the mixture. Stir everything well to combine. Cover the container and refrigerate for at least half a day. The chives will infuse their flavor into the soy sauce, creating a delicious seasoning sauce.

※ Storage Tip: This chives soy sauce can be stored in the refrigerator for about 1 to 2 months. Over time, the texture and color of the chives may gradually change, but the flavor remains excellent. Feel free to adjust the quantities based on your family’s needs and consumption. This versatile sauce is perfect for side dishes, marinades, or even as a salad dressing!
