Fresh Vegetable Ingredients
  • 1 bunch chives (washed and prepared)
  • 4-5 stalks green onions
  • 1 stalk leek (white part only)
  • 1/4 onion
  • 3-4 Korean green chilies (adjust to your spice preference)

Flavorful Seasoning Ingredients
  • 5 Tbsp fish sauce (anchovy based)
  • 5 Tbsp soy sauce
  • 3 Tbsp plum extract (for sweetness and umami)
  • 1 Tbsp double-strength vinegar (for a refreshing tang)
  • 3 Tbsp water
  • 2 Tbsp red pepper flakes (for color and spice)
  • 1 Tbsp minced garlic
  • 1 Tbsp ginger juice (to remove any raw smell and add aroma)
  • 2 Tbsp toasted sesame seeds
  • 2 Tbsp sesame oil

Cooking Instructions

Step 1

First, finely chop the washed chives into approximately 0.5 cm pieces. Cutting them not too long ensures the seasoning coats them evenly and makes them easier to eat.

Finely mince the 1/4 onion. Chop the 4-5 green onions similarly to the chives, or slightly finer. Finely minced vegetables blend better with the seasoning.

Step 3

Mince the 3-4 Korean green chilies after removing the seeds for a spicy kick. You can increase the amount if you like it spicier, or substitute with less spicy peppers if preferred.

In a large bowl, combine the prepared chives, minced onion, green onions, and Korean green chilies. Add 5 Tbsp fish sauce, 5 Tbsp soy sauce, 3 Tbsp plum extract, 1 Tbsp double-strength vinegar, 3 Tbsp water, 2 Tbsp red pepper flakes, 1 Tbsp minced garlic, 1 Tbsp ginger juice, 2 Tbsp toasted sesame seeds, and 2 Tbsp sesame oil. Make sure to add all the seasoning ingredients.

Step 5

Using a spatula or spoon, gently mix all the ingredients until well combined. It’s important to mix thoroughly so the vegetables’ moisture naturally integrates with the seasoning.
