Main Ingredients- 1 Large Leek
- 2 King Oyster Mushrooms
- 3 Shiitake Mushrooms
- 1 bag (40g) Enoki Mushrooms
- 1 handful Oyster Mushrooms
- 2 packets Ottogi Chaehwang Ramen
- 1 package Green Garden Vegan Dumplings
- 1/2 block Firm Tofu
- 1 Red Chili Pepper
Broth Ingredients- 1/4 head Napa Cabbage
- 50g Daikon Radish
- 1/4 head Napa Cabbage
- 50g Daikon Radish
Cooking Instructions
Step 1
First, prepare the vegetables. Slice the leek and red chili pepper diagonally into about 0.5cm thick pieces. Cut the firm tofu into slices about 0.5cm thick. Divide the napa cabbage into two halves, and cut the daikon radish into thick slices, approximately 3cm x 4cm and about 0.5cm thick.
Step 2
Prepare the mushrooms. Slice the king oyster mushrooms lengthwise into 5 pieces, each about 1cm thick. Remove the bases from the enoki and oyster mushrooms, and either tear them apart or cut them into larger pieces. For the shiitake mushrooms, slice two of them as they are, and score the remaining ones decoratively with a knife.
Step 3
Now, let’s make the delicious broth. In a pot, combine 6 cups (1.2L) of water with the prepared napa cabbage and daikon radish. Add the 2 packets of Ottogi Chaehwang Ramen soup base and bring to a boil. Once boiling, add the prepared Ottogi Green Garden Vegan Dumplings and simmer for about 5 more minutes to allow the flavors to meld.
Step 4
Prepare the noodles to accompany the hot pot. In a separate pot, boil 4 cups (800ml) of water, then add just the noodle packets from 2 Ottogi Chaehwang Ramen and cook for about 2 minutes. Drain the cooked noodles and rinse them under cold water to remove excess starch. Drain thoroughly in a colander. This step helps keep the noodles from becoming mushy and maintains their chewy texture.
Step 5
All the components are ready! Arrange the hot pot. Start by placing the cooked napa cabbage and daikon radish at the bottom of the pot. Artfully arrange the prepared mushrooms, tofu, leek, and red chili pepper on top. Finally, place the drained, cooked ramen noodles in the center. Carefully pour the hot broth over everything to complete your delicious vegan dumpling hot pot. Enjoy your meal!
