This is ‘Yamikage Udon,’ a dish featured in the popular anime series ‘Demon Slayer’! Although it looks like a fried egg in the picture, it’s actually made with yam! Enjoy this unique and healthy noodle dish.

Udon Ingredients

  • 1 dashi soup pack
  • 1/2 yam (about 100g)
  • Scallions, chopped
  • Katsuobushi (bonito flakes) to taste
  • 1 serving of udon noodles (frozen or fresh)
  • 1 egg yolk
  • Shredded seaweed (nori)
  • Wasabi to taste

Sauce

  • Soy sauce
  • Mirin (sweet rice wine)
  • 3 Tbsp sugar

Cooking Instructions

First, let’s prepare the broth for the udon. In a pot, combine cold water and the dashi soup pack. Bring it to a boil over medium heat. Let it simmer for about 10 minutes to extract the full flavor of the dashi pack.

While the broth is simmering, prepare the udon sauce. In a small bowl, mix soy sauce and mirin in a 1:1 ratio. Add 3 tablespoons of sugar and stir until well combined. This will form the base of your delicious udon broth.

Now, let’s prepare the star ingredient: the fresh yam. Carefully peel the skin off the yam using a peeler or a knife. Once peeled, wash the yam thoroughly and then grate it finely using a grater. This will create a sticky, paste-like texture.

Once the yam is grated, remove the dashi soup pack from the broth and discard it. Add the prepared udon sauce to the broth and stir well. Taste the broth and adjust the seasoning with more soy sauce or sugar if needed, aiming for a balanced sweet and savory flavor.

When the broth returns to a boil, reduce the heat to low. Sprinkle a handful of katsuobushi (bonito flakes) over the surface of the broth. Let it steep for about 3 minutes to infuse the broth with its umami flavor. Then, strain the broth using a fine-mesh sieve to remove the katsuobushi for a clear soup.

It’s time to cook the udon noodles. Bring a generous pot of water to a rolling boil. Add the udon noodles and cook according to the package instructions, usually about 2-3 minutes for frozen noodles and 1 minute for fresh ones. Stir occasionally to prevent them from sticking together.

Assemble your udon bowls! Place the cooked udon noodles in a deep serving bowl. Spoon a generous amount of the grated yam over the noodles. Carefully place the egg yolk in the center. Garnish with chopped scallions, shredded seaweed, and a dollop of wasabi on the side. Finally, pour the hot, flavorful udon broth over everything.
