Unique Tofu Curry Rice: A Soft, Mapo Tofu Style Delight!

I had leftover tofu and wondered what to do with it, so I decided to try adding it to curry. To my surprise, the soft tofu and rich curry sauce were an unexpectedly great match! It’s like a mapo tofu, but with curry. Served over rice, it makes for a satisfying and delicious meal. Try making this unique tofu curry rice easily at home!

Main Ingredients

  • 6 blocks of solid curry roux (choose your preferred spice level)
  • 320g firm tofu, cubed
  • 1 medium sweet potato, peeled and cut into large chunks (approx. 150g)
  • 1 medium onion, peeled and cut into large chunks (approx. 150g)
  • 2 cups cherry tomatoes (approx. 200g)
  • 3 cups water (720ml)
  • 2 servings of warm cooked rice
  • Hemp seeds, a sprinkle (optional)

Cooking Instructions

Step 1

First, gently press the tofu to remove excess water, then cut it into cubes. Heat 1 tablespoon of cooking oil and 1 tablespoon of butter in a pan over medium heat. Add the cubed tofu and pan-fry until golden brown on all sides. Once lightly crisped, transfer the tofu to a paper towel-lined plate to drain excess oil and set aside. This frying step prevents the tofu from breaking apart and enhances its texture.

Add the remaining 1 tablespoon of cooking oil to the same pan. Sauté the large chunks of onion over medium heat until translucent. Once the onion’s sweetness is released, add the large chunks of sweet potato and stir-fry together for another 2-3 minutes. You can substitute sweet potato with other vegetables like potatoes or carrots if you prefer.

When the onion and sweet potato are partially cooked, add the cherry tomatoes and stir-fry for another 1-2 minutes until they begin to soften slightly. Pour in 3 cups (720ml) of water, cover the pan with a lid, and simmer over medium-low heat for about 10-15 minutes, or until the sweet potato is completely tender and can be easily pierced with a fork.

Once the sweet potato is fully cooked, reduce the heat to low. Add the 6 blocks of solid curry roux. Use a spatula or ladle to break down the curry blocks and stir them into the water until well dissolved. It’s important to stir thoroughly to ensure the curry doesn’t clump and mixes smoothly with the liquid.

As the curry sauce thickens, carefully add the pre-fried tofu to the pan. Gently mix to coat the tofu evenly with the curry sauce, being careful not to break the tofu cubes. Continue to simmer over low heat for another 2-3 minutes to allow the flavors to meld.

For an even creamier and richer flavor, stir in 50ml of milk during the final stage and heat gently. Once the milk is well incorporated into the curry, turn off the heat. Serve the curry and tofu generously over warm cooked rice. Optionally, sprinkle with hemp seeds for an extra touch. Enjoy your delicious Tofu Curry Rice!
