This ‘Ginseng Pizza’ was born from the desire to enjoy ginseng, typically known for its medicinal properties and slightly bitter taste, in a more accessible way. Applying the popular Gorgonzola pizza as a base, we’ve created a pizza with a sweet, simmered ginseng jam as its foundation. To balance the ginseng, we’ve added sweet banana slices, crunchy nuts, and beloved cheese, making it palatable for everyone, even those hesitant about ginseng. This ‘Mild Ginseng Pizza’ is perfect as a satisfying meal or a delightful light snack!

For the ‘Ginseng Jam’

  • 200g fresh ginseng
  • 1 cup granulated sugar
  • 1.5 Tbsp oligosaccharide (or corn syrup)
  • 1.5 cups water

For the Pizza

  • 2 tortillas, about 20cm diameter
  • 1 ripe banana
  • 20g sliced almonds
  • 200g pizza cheese (e.g., mozzarella, cheddar blend)
  • A pinch of fresh parsley (for garnish)
  • A small handful of baby greens (for garnish)

Cooking Instructions

Step 1

Prepare all your ingredients before you begin. Wash the ginseng thoroughly and pat it dry. Thinly slice the banana.

Let’s make the special ‘Ginseng Jam’ for the pizza.
1. Wash the ginseng well. You can leave the peel on. Finely mince the ginseng. Using a food processor is also an option.
2. In a saucepan, combine the minced ginseng, 1 cup of sugar, and 1.5 cups of water. Bring to a boil over medium-high heat.
3. Once it starts boiling, reduce the heat to low. Stir continuously with a spatula to prevent sticking to the bottom, and let it simmer until the ginseng becomes translucent and the mixture thickens to a jam-like consistency, about 15-20 minutes.
4. When most of the water has evaporated and the jam is thick and sticky, stir in 1.5 Tbsp of oligosaccharide (or corn syrup) quickly. Your ginseng jam is ready!

Transfer the warm ginseng jam to a plate and let it cool completely. It’s best to use it once it has cooled down.

Now, let’s assemble and bake the pizza.
1. Place the two tortillas on an oven-safe pan or pizza stone. Spread the cooled ginseng jam evenly over each tortilla, leaving about a 1cm border around the edge. Arrange the sliced banana over the jam.
2. Generously sprinkle the pizza cheese over the bananas. The cheese will melt and hold everything together beautifully. Finally, sprinkle the sliced almonds for a delightful crunch.
3. Place the assembled tortillas on an oven pan.
4. Bake in a preheated oven at 180°C (350°F) for approximately 20 minutes, or until the cheese is melted and golden brown, and the tortilla edges are crispy.

Carefully remove the finished ginseng pizza from the oven and let it cool slightly. Slice it into desired portions. For a beautiful presentation and an extra touch of freshness, garnish with a sprinkle of chopped fresh parsley or a small handful of baby greens. Enjoy your healthy and unique pizza!
