  • 1 Fresh Egg
  • Onion (thinly sliced)
  • Green Onion (finely chopped)
  • 1 Slice of Cheese

Melt a knob of butter in a wide pan. Ensure the butter coats the entire surface of the pan evenly. Then, place the tortilla in the pan and toast it until golden brown on both sides. Once it has a nice golden hue, carefully transfer it to a plate and let it cool slightly.

In the same pan (if there’s leftover butter, you can use it as is!), fry an egg. Cook the egg yolk to your preference, whether runny or firm. You can even cook it lightly if you plan to break the yolk later. Once the egg is partially cooked, evenly sprinkle the thinly sliced onion and finely chopped green onion over the egg. The sweet aroma of the onions and scallions will start to waft up.

Gently place one slice of cheese over the onions and green onions. The cheese will softly bind the egg and other ingredients together.

Now, take the toasted tortilla and place it on top of the fried egg and cheese. To achieve the best crispiness, make sure the side of the tortilla that was toasted faces the egg.

Carefully tilt the pan and flip the entire toast over in one swift motion. Be gentle to prevent the ingredients from scattering. On the flipped side, especially over the egg, sprinkle about 1/2 to 1 tablespoon of sugar. This will add a delightful sweetness.

Reduce the heat to medium-low and wait until the egg is fully cooked and the cheese is melted. Then, gently press down on the pan and flip the toast back and forth, toasting both sides of the tortilla until golden and crispy. Cook it as if you’re ‘sealing’ the ingredients within the tortilla like a sandwich. Enjoy it immediately while it’s warm!
