  • 1 packet of instant ramen
  • 1 handful of soybean sprouts (approx. 30g)
  • 1/6 onion
  • 1/2 cheongyang pepper (optional, for added spiciness)

Cooking Instructions

First, prepare the vegetables for your dish. Peel the onion and slice it thinly into julienne strips. If you’re using cheongyang pepper, remove the seeds and also slice it thinly. If you enjoy a spicier kick, feel free to leave the seeds in.

Rinse the soybean sprouts thoroughly under running water. It’s important to wash them well to avoid any unpleasant bean sprout odor.

In a small bowl or cup, pour 50ml of hot water and add the ramen soup base. Stir well with chopsticks until the powder is completely dissolved without any clumps.

To the dissolved soup base, add 1 Tbsp of vinegar for a tangy flavor, 1 Tbsp of sugar for a touch of sweetness, and 1 Tbsp of sesame oil for a nutty aroma. Mix everything thoroughly until well combined.

Now, add 200ml of cold water to this seasoned base. Your refreshing and savory cold ramen broth is ready! Taste it and adjust the vinegar or sugar to your preference if needed.

It’s time to cook the noodles and vegetables. Fill a pot with a generous amount of water and bring it to a rolling boil. Once boiling, add the rinsed soybean sprouts and blanch them for about 1 minute. Blanching the sprouts first helps maintain their crisp texture.

After removing the soybean sprouts, add the ramen noodles and the included garnish packet to the boiling water. Cook for approximately 4 minutes and 30 seconds, which might be slightly less than the time indicated on the ramen package. (Adjust cooking time based on your specific ramen brand.)

Here’s the secret to chewier noodles! While the noodles are cooking, periodically lift and swirl them with your chopsticks. This movement exposes them to air, making the noodles more elastic and delightfully chewy.

When the noodles are almost done, add the thinly sliced onions and cook for just an additional 30 seconds. You want the onions to retain a slight crispness. Turn off the heat immediately and transfer the noodles and vegetables to a colander under cold running water to quickly cool them down.

Drain the noodles and vegetables thoroughly after rinsing them under cold water. Excess water can dilute the broth, so try to remove as much as possible. Arrange the cooled noodles and vegetables attractively in your serving bowl.
