Ultimate Crispy Potato Pizza
[Today’s Recipe] Make an Exceptionally Crispy Potato Dish with Gangwon-do Potatoes
This method requires no boiling or mashing of potatoes. Enjoy a crispy potato pizza with a simple technique. It’s incredibly crispy on the outside and tender on the inside.
Potato Pizza Ingredients- 3 medium potatoes, thoroughly washed
- 6 Tbsp potato starch (approx. 60g)
- 2 tsp fine chili powder (approx. 6g)
- 2 pinches salt (approx. 1g)
- 1 Tbsp grated Parmesan cheese (optional, approx. 10g)
- 1/2 Tbsp dried oregano (optional, approx. 2.5g)
- A pinch of black pepper
- Shredded pizza cheese (like mozzarella) to your preference
- A drizzle of honey (for added sweetness)
- A sprinkle of dried parsley (for garnish)
- A little cooking oil (for greasing the pan)
Cooking Instructions
Step 1
First, thoroughly wash the 3 potatoes under running water to remove any dirt. Then, peel the skin using a peeler and slice them as thinly as possible, about 2-3mm thick. Thin slices are key to achieving maximum crispiness.
Step 2
Place the thinly sliced potatoes in a bowl of cold water and rinse them to remove excess starch. Gently swirl the potatoes in the water, changing the water 2-3 times until it runs clear. This step helps prevent the potato slices from sticking together and contributes to their crispiness. After rinsing, drain them well in a colander.
Step 3
Prepare a large zip-top bag or a spacious plastic bag. Add all the dry seasoning ingredients for the potato pizza. This includes 6 Tbsp potato starch, 2 tsp fine chili powder, 2 pinches of salt, 1 Tbsp grated Parmesan cheese (optional) for added flavor, 1/2 Tbsp dried oregano (optional) for aroma, and a pinch of black pepper. Gently shake the bag to ensure the seasonings are well combined.
Step 4
Add the drained potato slices to the bag with the mixed seasonings. Seal the bag securely and shake it well, or gently massage the bag, to ensure the seasonings evenly coat every potato slice. Coating each slice thoroughly is essential for flavor and texture.
Step 5
Now, prepare the pan for cooking. Place the pan over low heat and add about two swirls of cooking oil, ensuring it coats the entire bottom. Before the pan gets too hot, arrange the seasoned potato slices in a single layer, overlapping them as little as possible, like building a pizza base. Creating a circular shape will make it look more appealing.
Step 6
Turn the heat to medium. Once the oil starts to shimmer and gently bubble, immediately cover the pan with a lid. Cook for about 10 minutes with the lid on. This steaming and frying process will cook the potatoes through while starting to crisp the edges.
Step 7
After 10 minutes, lift the lid and carefully flip the potato pizza using a spatula. Cover the pan again with the lid and cook for another 10 minutes. This second side will also become golden brown and crispy. Keep the heat on medium-low to prevent burning.
Step 8
Once both sides of the potatoes are nicely browned, carefully flip the potato pizza one more time using the spatula. Now, generously sprinkle your preferred pizza cheese (like mozzarella or cheddar) over the cooked surface. Add a sprinkle of dried parsley for a touch of color. Cover the pan again with the lid and cook on low heat until the cheese is completely melted.
Step 9
When the cheese is perfectly melted and gooey, your crispy potato dish is ready! It will be wonderfully crisp on the outside and tender on the inside. Carefully remove it from the pan and place it on a serving plate.
Step 10
For an extra touch of flavor, drizzle a little honey over the finished potato pizza. The sweet and savory combination creates a truly delightful taste experience. Enjoy it immediately while it’s warm to savor the perfect crispy and tender texture!
