As the summer heat approaches, it’s time to enjoy refreshing and healthy Kongguksu! Here’s a special recipe for those sensitive to the beany flavor of traditional soybean noodles. We’ll use soy milk, soft tofu, and a touch of peanut butter for an incredibly smooth and nutty broth. Get ready to be delighted by its velvety texture and rich flavor!
Main Ingredients- 500ml Soy Milk (unsweetened, plain recommended)
- 1 pack Soft Tofu (approx. 300-400g, for a smooth texture)
- 2 Tbsp Peanut Butter (creamy type)
- 0.5 Tbsp Salt (or to taste)
- Noodles for 2 servings (Somen)
Cooking Instructions
Step 1
First, let’s cook the noodles. Bring a large pot of water to a rolling boil. Add the noodles (Somen) and once the water boils up again, pour in 1 cup of cold water. Repeat this process 2-3 times to ensure the noodles are perfectly cooked and chewy. (Tip: Be careful not to let the pot overflow while boiling the noodles!)

Drain the cooked noodles using a colander. Rinse them thoroughly under cold running water, rubbing them gently. This removes excess starch, preventing the noodles from becoming mushy and ensuring a delightful chewiness. Drain them well.
