  • Difficulty : Beginner

Main Ingredients

  • 500ml Soy Milk (unsweetened, plain recommended)
  • 1 pack Soft Tofu (approx. 300-400g, for a smooth texture)
  • 2 Tbsp Peanut Butter (creamy type)
  • 0.5 Tbsp Salt (or to taste)
  • Noodles for 2 servings (Somen)

Cooking Instructions

Step 1

First, let’s cook the noodles. Bring a large pot of water to a rolling boil. Add the noodles (Somen) and once the water boils up again, pour in 1 cup of cold water. Repeat this process 2-3 times to ensure the noodles are perfectly cooked and chewy. (Tip: Be careful not to let the pot overflow while boiling the noodles!)

Step 1

Step 2

Drain the cooked noodles using a colander. Rinse them thoroughly under cold running water, rubbing them gently. This removes excess starch, preventing the noodles from becoming mushy and ensuring a delightful chewiness. Drain them well.

Step 2

Step 3

Now, let’s prepare the star of the dish: the Kongguksu broth! In a blender, pour in the 500ml of soy milk. Add the pack of soft tofu, roughly chopped. Then, add 2 tablespoons of peanut butter to enhance the nutty flavor. (Tip: Peanut butter makes the broth incredibly smooth and adds a wonderful depth of flavor!)

Step 3

Step 4

Secure the lid on the blender and blend until all ingredients are smoothly combined. Blend until you achieve a creamy, lump-free consistency. After blending, add 0.5 tablespoon of salt and taste. If needed, gradually add more salt until it reaches your desired seasoning.

Step 4

Step 5

For the garnishes, wash the cucumber, remove the seeds, and julienne it thinly. Wash the cherry tomatoes, remove the stems, and cut them in half for easy eating.

Step 5

Step 6

Arrange the drained noodles in your serving bowls.

Step 6

Step 7

Generously ladle the blended broth over the noodles. Decorate with the julienned cucumber and halved cherry tomatoes. Finally, sprinkle a pinch of sesame seeds for extra flavor and visual appeal. Your delicious and visually stunning Soy Milk & Tofu Kongguksu is ready to be enjoyed!
