Fried Rice Ingredients
  • 2 bowls of cooked rice (warm)
  • 20 pre-cooked shrimp (small size)
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 10 stalks of chives
  • 1 Tbsp oyster sauce
  • 1 Tbsp olive oil
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, thaw the pre-cooked shrimp by soaking them in cold water for about 10 minutes. Once thawed, remove the tail and, for a cleaner taste, devein the shrimp by making a shallow cut along the back.

Step 2

Finely dice the red and yellow bell peppers (about 3-5mm cubes), removing the seeds and membranes. Finely chop the chives as well. Dicing the vegetables finely will help ensure the fried rice is fluffy and not clumpy.

Step 3

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the prepared shrimp and stir-fry until they turn pink and are about halfway cooked.

Step 4

Once the shrimp are partially cooked, add the finely diced bell peppers to the pan. Continue to stir-fry for another 1-2 minutes. The key is to cook them just enough to retain a slight crispiness.

Step 5

Finally, add the chopped chives and stir-fry for about 30 seconds, just until fragrant. Chives wilt quickly, so add them at the very end.

Step 6

Now, add the 2 bowls of warm cooked rice and 1 tablespoon of oyster sauce to the pan. Stir-fry everything together evenly, breaking up any clumps of rice with your spatula. Season with salt and black pepper to taste.

Step 7

In a separate bowl, crack the 2 eggs and add a pinch of salt. Whisk gently with chopsticks, being careful not to overbeat. This helps the egg cook into a soft, delicate layer.

Step 8

To shape the fried rice into a UFO, press the shrimp fried rice firmly into a small bowl or ramekin. Once shaped, carefully invert it onto a clean plate or the pan itself (the pan can be used without wiping if it’s not too dirty).

Step 9

Place the bowl with the shaped fried rice in the center of the pan. Pour the whisked egg mixture around the base of the fried rice, creating the outer ‘UFO’ shape. Adjust the amount of egg to form a nice border.

Step 10

Reduce the heat to very low. Cover the pan with a lid and let the egg cook until set, which should take about 2-3 minutes. You’ll see the egg gently puff up and cook through.
