Tuna Mayo Rice Balls (Jeong-hyun Lee Style)

These rice balls are perfect for a quick bite when you’re busy or for a speedy breakfast. This recipe was featured on the show ‘Pyeonstorang’. While I didn’t make homemade mayonnaise, I’ll include a note in case you need tips. Highly recommended for lunchboxes too!

Ingredients

  • Canned Tuna 2 Tbsp (approx. 1/4 can)
  • Mayonnaise 1 Tbsp
  • Onion, a moderate amount (finely chopped)
  • Cooked Rice, a moderate amount (about 1 bowl)
  • Butter 10g
  • Soy Sauce 1 Tbsp

Cooking Instructions

In a bowl, combine the drained canned tuna (about 2 tablespoons), 1 tablespoon of mayonnaise, and finely chopped onion. Drain the tuna thoroughly to prevent greasiness and enhance the creamy flavor of the mayonnaise. (It’s even better to drain it well since you’ll be adding butter later.) Mix everything well.

Place about 1 bowl of cooked rice (preferably warm) into another bowl. Add 10g of butter and 1 tablespoon of soy sauce. Gently mix the rice with a spatula or spoon, being careful not to mash the grains. This mixture creates a delicious buttery soy sauce rice, similar to margarine rice. Mixing with butter enhances the flavor significantly! Taste the rice and add a tiny bit more butter or soy sauce if needed.

Lightly wet your hands or wear gloves, then shape the seasoned rice into balls of your desired size. Flatten them slightly to create a small indentation in the center. Spoon the prepared tuna mayo mixture into this hollow.

Carefully bring the edges of the rice together to enclose the tuna mayo filling. Pinch to seal, then shape the rice ball into your preferred form. Chef Jeong-hyun Lee often makes triangular shapes, but round ones are also great.

While the rice balls are delicious as they are, pan-frying them briefly, as Chef Jeong-hyun Lee does, makes them even more appealing. Lightly grease a pan or use a non-stick pan over medium-low heat. Place the rice balls on the pan and rotate them to toast each side until golden brown. This gives them a slightly crispy exterior while warming the interior beautifully.
