Main Ingredients
- 1 can Tuna (drained)
- 1/4 Carrot
- 1/4 Onion
- 1/4 Green Bell Pepper
- 5-6 Korean Perilla Leaves (깻잎)
- 1/4 Mushroom (e.g., Shiitake, King Oyster)
Batter Ingredients
- 3 Tbsp Whole Wheat Flour
- 3 Tbsp Curry Powder (adjust to taste)
- A little Water
- 1/4 block Firm Tofu (mashed)
- 1 Egg
- Rice Bran Oil (or vegetable oil) for frying
- Pinch of Salt and Pepper (optional)
- 3 Tbsp Whole Wheat Flour
- 3 Tbsp Curry Powder (adjust to taste)
- A little Water
- 1/4 block Firm Tofu (mashed)
- 1 Egg
- Rice Bran Oil (or vegetable oil) for frying
- Pinch of Salt and Pepper (optional)
Cooking Instructions
Step 1
Thoroughly drain the oil from the canned tuna and use your hands to gently break it into bite-sized pieces. Aim for a texture that isn’t too finely mashed, so you still have some pleasant texture.
Step 2
Finely mince all the prepared vegetables: carrot, onion, green bell pepper, perilla leaves, and mushroom. Mincing them very finely will help them incorporate well into the patty mixture and cook evenly. Using a food processor or blender can also be helpful.
Step 3
In a large bowl, combine the drained tuna, finely minced vegetables, mashed tofu, egg, whole wheat flour, and curry powder. Mix and knead the ingredients together to form a cohesive dough. If the mixture is too wet, add a little more whole wheat flour or curry powder. If it’s too dry, a tiny splash of water might help, but often the moisture from the other ingredients is sufficient. You can add a pinch of salt and pepper for extra flavor, though the tuna and curry usually provide enough seasoning. Mix well with a spatula or your hands until all ingredients are evenly distributed.
Step 4
Heat a frying pan over medium heat and add a generous amount of rice bran oil. Scoop spoonfuls of the tuna mixture and shape them into round, flat patties, about 1 cm thick. Making them too thick will result in longer cooking times and potentially undercooked centers. Ensure you don’t overcrowd the pan.
Step 5
Once one side is golden brown, carefully flip the patties to cook the other side. Cook over medium-low heat to ensure the inside cooks through without burning the outside.
