Tuna and Wild Chive Pancakes (Chamchi Dallae Jeon)

Savor the fresh flavors of spring with our ‘Tuna and Wild Chive Pancakes’. We’ve gathered fresh wild chives from the garden, cleaned them meticulously, and chopped them to add a wonderful aromatic touch to our pancakes. Combined with savory canned tuna, these jeon offer a delightful balance of fragrant chives and rich tuna. They are crispy on the outside and tender on the inside, making them a perfect springtime treat that everyone, especially kids, will love!
Ingredients- 1 bunch fresh wild chives (approx. 50g)
- 1 can (150g) tuna in water or oil, drained
- 1 cup tempura powder (approx. 100g)
- 1 1/4 cups cold water (approx. 250ml)
Cooking Instructions
Step 1
In a large bowl, combine 1 cup of tempura powder. Gradually add 1 cup of cold water, whisking until you achieve a smooth batter without any lumps. Avoid overmixing to maintain a crispy texture.
Step 2
Drain the canned tuna very well by pressing it against a sieve. This step is crucial to prevent the pancakes from becoming greasy and to enhance the savory flavor. Add the drained tuna to the batter and mix gently.
Step 3
Thoroughly wash the wild chives to remove any soil. Trim off any yellowed or wilted leaves. Rinse them under cold running water several times and shake off excess water. You’ll need about one handful of the cleaned chives.

Finely chop the prepared wild chives and add them to the batter. Gently fold them into the batter, ensuring they are evenly distributed. This will infuse the pancakes with the chives’ fresh aroma.
Step 5
Check the consistency of the batter. If it seems too thick, add the remaining 1/4 cup of cold water and mix until it reaches a pourable consistency, suitable for spreading thinly on a pan. The batter should not be too stiff or too runny.

Heat a generous amount of cooking oil in a non-stick pan over medium heat. Ladle a portion of the batter onto the hot pan. Using the back of the ladle or a spatula, spread the batter thinly and evenly into a round shape. Spreading it thinly is key to achieving a crispy pancake.
Step 7
