Main Ingredients

  • 1 block Firm Tofu (firm or stewing type recommended)
  • 1 can Tuna (drained)
  • 3 Shiitake Mushrooms
  • 1 stalk Green Onion
  • 1 Onion

Seasoning

  • 1 Tbsp Fish Sauce
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Corn Syrup or Honey (for sweetness and gloss)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Thinly slice the onion and spread it evenly on the bottom of a wide, shallow pot. This prevents the tofu from sticking and infuses the stew with the onion’s natural sweetness.

Cut the tofu into 1.5-2 cm thick slices and arrange them neatly on top of the onions. Using firm tofu will help it hold its shape during cooking.

Slice the shiitake mushrooms thinly and scatter them over the tofu. If using dried shiitake mushrooms, rehydrate them in warm water before slicing.

In a small bowl, combine the fish sauce (1 Tbsp), soy sauce (2 Tbsp), gochugaru (2 Tbsp), sugar (1 Tbsp), minced garlic (1 Tbsp), corn syrup or honey (1 Tbsp), and a pinch of black pepper. Whisk together to create a flavorful seasoning paste. The corn syrup or honey adds a pleasant sweetness and a glossy finish.

Pour the prepared seasoning paste evenly over the ingredients in the pot. Spread it out so it coats everything.

Add just enough water to partially cover the ingredients, about halfway up. This ‘lightly moist’ approach ensures the flavors concentrate as it simmers.

Open the can of tuna, drain most of the oil, and place the tuna, including the remaining liquid, on top of the other ingredients. The tuna’s natural juices add depth and umami to the stew.

Slice the green onion diagonally and arrange it on top of the stew. This adds a fresh aroma and a hint of pungent flavor.

Bring the stew to a boil over medium-high heat. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for 10-15 minutes, or until the ingredients are tender and the sauce has thickened slightly. For a thicker sauce, you can remove the lid for the last few minutes and increase the heat slightly. Serve hot and enjoy with rice! ^^
