Main Ingredients
  • Cooked Rice: 400g (approx. 2 bowls)
  • Garlic Scapes: 100g
  • Canned Tuna: 200g can
  • Eggs: 3
  • Green Onion: 1/2 stalk

Cooking Instructions

Step 1

Drain the oil completely from the canned tuna using a sieve. This step is crucial to prevent the fried rice from becoming greasy and ensures a clean flavor.

Step 2

Wash the green onion and chop it finely. The aromatic quality of the green onion will enhance the overall flavor of the fried rice.

Step 3

Wash the garlic scapes and chop them into 2-3 cm lengths at an angle. Cutting them into manageable pieces makes the fried rice easier to eat.

Step 4

Crack 3 eggs into a large bowl.

Step 5

Add 1 Tbsp of cooking wine (mirin) to the eggs and whisk gently to create an egg mixture. The cooking wine helps to eliminate any eggy odor.

Step 6

Heat 3 Tbsp of cooking oil in a frying pan over medium heat.

Step 7

Add the chopped garlic scapes to the heated pan and begin to stir-fry them.

Step 8

Add 1 Tbsp of minced garlic to the pan with the garlic scapes. Sauté them together over medium heat for about 1 minute, allowing the garlic aroma to release fully.

Step 9

Push the sautéed garlic scapes and minced garlic to one side of the pan. Pour the whisked egg mixture into the empty space and scramble the eggs. Stir with chopsticks until cooked.

Step 10

Once the scrambled eggs are softly set, mix all the ingredients in the pan together (garlic scapes, minced garlic, and scrambled eggs) using a spatula.

Step 11

Add the 2 bowls of cooked rice to the pan. Break up any clumps of rice and mix it well with the other ingredients. Ensure the rice is evenly distributed and not sticking together.

Step 12

Add the drained tuna to the pan. From this point onwards, reduce the heat to low to prevent burning.

Step 13

Add 2 Tbsp of oyster sauce for an umami boost.

Step 14

Drizzle in 1 Tbsp of sesame oil for a nutty aroma and flavor.

Step 15

Add about 0.2 tsp of pepper. Stir everything together and cook for just another 30 seconds over low heat until all ingredients are well combined. Your delicious Tuna and Garlic Scape Fried Rice is ready to be enjoyed hot!
