  • 200g garlic scapes
  • 1 Tbsp olive oil
  • 1/4 carrot (optional)
  • 2 bowls cooked rice
  • Pinch of salt
  • 1 can tuna (drained)
  • 1/2 Tbsp soy sauce
  • Sesame oil or perilla oil, to taste
  • Toasted sesame seeds, to taste

Begin by thoroughly washing the fresh garlic scapes. Once clean, finely chop them into bite-sized pieces, about 3-4 cm long.

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped garlic scapes and stir-fry until they turn a vibrant dark green, which helps preserve their aromatic flavor and crisp texture. Next, add the finely diced carrot (optional) and sauté with the garlic scapes. Feel free to substitute or add other vegetables like onions or bell peppers if you have them on hand. Season lightly with a pinch of salt as the vegetables cook.

Add 2 bowls of cooked rice to the pan. Use a spatula to break up any clumps of rice and stir-fry, ensuring the rice is well combined with the garlic scapes and carrots.
