Main Ingredients

  • 20g Cooked Dried Radish Greens (cut into bite-sized pieces)
  • 300g Canned Tuna in Oil (drained)
  • 2 Chili Peppers (approx. 40g, finely chopped)
  • 2 Small Potatoes
  • 40g Onion (sliced or chopped)
  • 20g Minced Garlic

Braising Seasoning

  • 100ml Anchovy Broth
  • 1 Tbsp Soy Sauce for Soup
  • 0.5 Tbsp Fish Sauce
  • 2 Tbsp Mirin (Rice Wine)
  • 0.5 tsp Sugar
  • 2 Tbsp Perilla Oil
  • 2 Tbsp Gochugaru (Korean Chili Flakes)
  • Generous pinch of Black Pepper

Finishing Touches

  • 1 Tbsp Perilla Oil
  • Sesame Seeds to taste

For Sautéing

  • 1 Tbsp Cooking Oil

Cooking Instructions

Step 1

Wash the chili peppers, remove the stems, and finely chop them to make them easy to mix with rice. (Alternatively, you can slice them diagonally according to your preference.)

Peel and dice the 2 potatoes into small pieces. Place the diced potatoes in a pot, add enough water to cover them, and bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer until the potatoes are completely cooked. Drain the water and set the cooked potatoes aside.

Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the minced garlic and chopped onion, and sauté until fragrant. Sautéing the onion until translucent will bring out its sweetness.

Once the onion is tender, add the drained canned tuna and sprinkle generously with black pepper. Add the boiled potatoes and the prepared dried radish greens, and mix lightly.

Now, add all the braising seasoning ingredients (anchovy broth, soy sauce for soup, fish sauce, mirin, sugar, perilla oil, gochugaru) and mix well. Stir gently to ensure the seasoning coats all the ingredients evenly.

After adding the seasoning, reduce the heat to low and simmer for 2 minutes. Let it simmer gently to allow the flavors to meld into the ingredients.

Add the chopped chili peppers and simmer for another 2 minutes. The spiciness from the peppers will enhance the savory flavor.

Just before turning off the heat, stir in the finishing touches (1 tablespoon perilla oil and sesame seeds) and mix gently. The nutty aroma of perilla oil will add to the overall flavor.
