Hearty Tteokgalbi Fried Rice Packed with Vegetables!
I had leftover Tteokgalbi (Korean grilled short ribs), so I decided to make fried rice using it along with all the vegetables I had on hand.
Main Ingredients- Tteokgalbi (Korean grilled short ribs) 2 pieces (leftover or store-bought)
- King oyster mushrooms 2 pieces
- Eggs 2
- Chilled rice 1 bowl (warm up before use)

First, prepare all the ingredients for the fried rice. Get your Tteokgalbi, king oyster mushrooms, eggs, carrots, zucchini, onion, green onion, and chilled rice ready.

Chop the king oyster mushrooms into bite-sized pieces, or for a finer texture, process them in a food processor or grate them. This helps the mushroom flavor distribute evenly throughout the fried rice. Prepare the green onions similarly by chopping or grating them.

Wash the carrots, onions, and zucchini, then finely process or grate them using a food processor or grater. Using pureed vegetables makes the fried rice softer and more appealing, especially for picky eaters.
