Today, I made Tteokgalbi fried rice that you can enjoy with your kids while staying home due to the recent situation. It’s a sweet and savory fried rice that everyone, young and old, will love, and it’s simple to make, making it a frequent menu item! Main Ingredients

  • 4 Tteokgalbi patties
  • 1/4 Onion
  • 1/4 Carrot
  • 1 bowl of Rice
  • 1 Tbsp Oyster Sauce
  • 1/2 Tbsp Mayonnaise

Cooking Instructions

First, prepare the vegetables (onion, carrot) to be stir-fried with the tteokgalbi. Since this is for children, mince all ingredients into small, fine pieces. Finely minced vegetables mix well with the rice and are easier for children to eat.

Heat a frying pan with a moderate amount of cooking oil. Add the minced vegetables (onion, carrot) first and stir-fry them until fragrant. It’s best to cook slowly over medium heat to bring out the natural sweetness of the vegetables.

Once the onions become translucent and start to soften, add the minced tteokgalbi and continue stir-frying. Stir continuously to prevent the tteokgalbi from sticking to the pan.

When the tteokgalbi is cooked through and smells deliciously savory, add 1 tablespoon of oyster sauce to enhance the flavor. Oyster sauce is a key ingredient that brings out the umami in fried rice.

Next, add 1/2 tablespoon of mayonnaise for a creamy texture and flavor. Mayonnaise will make the fried rice richer and smoother, adding a sweet taste that children often enjoy.

Now, add a generous bowl of warm cooked rice on top of the fried rice mixture. In this recipe, no additional seasoning is added besides the oyster sauce and mayonnaise. The inherent saltiness of the tteokgalbi and the oyster sauce provide sufficient flavor.

Using a spatula, gently stir-fry to combine the rice with the cooked tteokgalbi and seasoned vegetables. Since all ingredients are already cooked, stir until the rice is evenly coated with the sauce, then turn off the heat. Overcooking can make the rice mushy.

To make the fried rice even more delicious, we’re adding a fried egg on the side. Cook the egg to your preference, either sunny-side up or over easy.
