Tteokbokki Ingredients

  • 1 cup Anchovy Broth (For a richer flavor, consider making your own broth with dried anchovies and kelp!)
  • 1 cup Water
  • 1 package Fish Cakes (Cut into bite-sized pieces)
  • 5 sticks Brown Rice Garaetteok (These offer a chewier, healthier texture than regular rice cakes)
  • 2 stalks Scallions (Cut into large pieces)
  • A pinch of Sesame Seeds (For a nutty aroma and garnish)

Spicy & Sweet Seasoning

  • 2 Tbsp Gochujang (Korean chili paste; add more if you like it spicier)
  • 1 Tbsp Soy Sauce (Adds umami)
  • 1 Tbsp Corn Syrup (For shine and sweetness)
  • 1 Tbsp Sugar (Adjust sweetness to your preference)
  • 1.5 Tbsp Gochugaru (Korean chili flakes; for color and a hint of heat)

Cooking Instructions

Step 1

In a wide pot, combine 1 cup of anchovy broth and 1 cup of water. Add all the seasoning ingredients: 2 Tbsp Gochujang, 1 Tbsp Soy Sauce, 1 Tbsp Corn Syrup, 1 Tbsp Sugar, and 1.5 Tbsp Gochugaru. Whisk everything together thoroughly to dissolve the paste and prevent sticking. Bring this mixture to a boil over high heat.

Step 2

Once the seasoning base is bubbling vigorously, add the 5 sticks of brown rice garaetteok and the 1 package of fish cakes. Stir occasionally to prevent the rice cakes from sticking together. Let it simmer for about 5-7 minutes, or until the rice cakes are soft and the sauce has thickened. Cooking time may vary depending on the type of rice cakes and the heat intensity.

Step 3

When the rice cakes and fish cakes are cooked to your liking, add the 2 large pieces of scallions and simmer for another minute or two. The fragrant scallions will infuse the sauce with a wonderful aroma. Turn off the heat, carefully transfer the Tteokbokki to a serving dish, and sprinkle with a pinch of sesame seeds for a final touch. Enjoy your homemade Brown Rice Tteokbokki!
