Main Ingredients- 1 packet of spicy ramen (Choose your preferred spicy ramen such as Yeol Ramen, Shin Ramyun, Jin Ramen Spicy, or Sze Chuan Fire Noodles)
- 1 sheet of fish cake (approx. 50g)
- 200g tteokbokki rice cakes (tteok) (Can be chewy rice cakes or soft wheat cakes)
- 700cc water
- 30g green onion (white parts sliced)
- 1 Tbsp minced garlic (approx. 20g)
- 1 Tbsp chili powder (medium grind, approx. 7g)
- 3 Tbsp cooking oil (approx. 18g)
Seasoning- 2 Tbsp fine chili powder (approx. 14g, use Cheongyang chili powder for extra spice)
- 1 Tbsp sugar (approx. 10g)
- 1/2 Tbsp glutinous rice flour (approx. 5g, can be omitted if unavailable)
- 1 Tbsp gochujang (Korean chili paste) (approx. 30g)
- 3 Tbsp corn syrup (or rice syrup) (approx. 36g)
- 2 Tbsp fine chili powder (approx. 14g, use Cheongyang chili powder for extra spice)
- 1 Tbsp sugar (approx. 10g)
- 1/2 Tbsp glutinous rice flour (approx. 5g, can be omitted if unavailable)
- 1 Tbsp gochujang (Korean chili paste) (approx. 30g)
- 3 Tbsp corn syrup (or rice syrup) (approx. 36g)
Cooking Instructions
Step 1
Prepare a spicy ramen to add a savory depth to your tteokbokki. You can use Yeol Ramen, Shin Ramyun, Jin Ramen Spicy, or Sze Chuan Fire Noodles – any spicy ramen you enjoy will work perfectly.
Step 2
Slice the green onion, focusing on the white parts, into larger pieces. We’ll sauté these with garlic to create an aromatic green onion oil.
Step 3
Cut the fish cake into bite-sized pieces (about 2cm). This will add a wonderful chewy texture to your tteokbokki.
Step 4
Prepare 200g of tteokbokki rice cakes. If your rice cakes are hard, soak them in cold water briefly before using to soften them. Both chewy rice cakes (mil-tteok) and soft rice cakes (ssal-tteok) are suitable.
Step 5
In a wide pan, add the sliced green onions and minced garlic. Pour in 3 tablespoons of cooking oil. This is the start of your delicious tteokbokki!
Step 6
Place the pan over low heat. Once the ingredients start sizzling gently, sauté for about 2 minutes to fully develop the fragrant green onion and garlic oil. This step significantly deepens the flavor of your tteokbokki.
Step 7
Now, add 1 tablespoon of medium-grind chili powder. Sautéing the chili powder in oil helps to mellow any raw bitterness and brings out its rich aroma and color.

Continue to cook over low heat for about 1 minute and 30 seconds. Be careful not to burn it; this process allows the chili powder to bloom in the oil, enhancing its flavor.

Pour in 700cc of water. It’s recommended to add about 200cc more water than the amount indicated on your ramen packet. This ensures there’s enough liquid for the rice cakes and noodles to cook without the sauce becoming too thick.

Add 2 tablespoons of fine chili powder and 1 tablespoon of sugar from the seasoning ingredients. This forms the foundation of your sweet and spicy tteokbokki flavor.

Stir in 1/2 tablespoon of glutinous rice flour quickly to dissolve it without lumps. The glutinous rice flour will thicken the sauce, giving it a glossy sheen and a delightful chewy texture. If you don’t have glutinous rice flour, all-purpose flour can be used as a substitute.

Add 1 tablespoon of gochujang and 3 tablespoons of corn syrup. Mix well. This combination will add the perfect balance of spiciness, sweetness, and a beautiful glaze to your tteokbokki.

Add the soup base and dried vegetable flakes from the ramen packet. Don’t miss any of them! The ramen seasoning will contribute a deep umami flavor to the tteokbokki sauce.

Once the sauce begins to boil, add the tteokbokki rice cakes. Stir to ensure the gochujang is fully dissolved and cook for 1 minute. The rice cakes will start absorbing the flavors.
