For the Potato Salad

  • 1/2 cup canned pineapple chunks (drained and finely chopped)
  • 1/4 onion (finely minced, soaked in water and vinegar for 10 mins, then drained)
  • 2 tbsp fresh blueberries (optional)
  • 1 tbsp butter
  • 3-4 tbsp mayonnaise
  • 1 tbsp honey (or corn syrup)
  • Pinch of salt

For the Sandwich
  • 2 buns or bread slices of your choice
  • Prepared potato salad
  • Ketchup (for drizzling)
  • Jam (for spreading)

Cooking Instructions

Step 1

Wash the potatoes thoroughly. Place them in a pot with water and a pinch of salt, and boil until tender (about 20-25 minutes). While still hot, peel the potatoes and transfer them to a bowl. Add the butter and mash them until smooth using a fork or a potato masher. (Tip: Boiling the potatoes with their skins on helps retain nutrients and makes them easier to handle!)

Step 2

Add the mayonnaise and honey (or corn syrup) to the mashed potatoes. Mix well until creamy and well combined. Taste and season with salt as needed.

Step 3

Drain the canned pineapple chunks and finely chop them. Finely mince the onion that has been soaked in water and vinegar and then drained. (Tip: Using fresh pineapple will add an even brighter, tangier flavor. If you have pickled cucumbers, finely dicing them and adding them will also enhance the taste.)

Step 4

Slice your chosen buns or bread in half. Spread a thin layer of jam (or your favorite fruit jam) on one half, and a layer of ketchup on the other half. (Tip: Feel free to use other condiments like whole grain mustard or cream cheese instead of ketchup or jam!)

Step 5

Generously spoon the prepared potato salad onto one half of the bread, filling it generously.

Step 6

Finally, place the fresh blueberries (if using) on top of the potato salad for a colorful garnish. This Hawaiian potato salad sandwich is sure to bring a delightful vacation vibe.

Step 7

Enjoy your delicious Hawaiian potato salad sandwich, beautifully decorated with pineapple and blueberries!
