This recipe not only neutralizes any off-putting smells but also makes for a fantastic side dish that pairs wonderfully with rice. You can even roll it up inside omelets or savory crepes for a delightful treat, reminiscent of a spicy Jeju-style radish pancake. Steamed Radish Delight and Steamed Kimchi Filling are incredibly simple yet delicious dishes, perfect for breathing new life into old radish salad or aged kimchi.
Main Ingredients- Radish salad with a slight off-odor, 200g
- Plum extract (or syrup) 2 Tbsp
- Perilla oil 2 Tbsp
- Anchovy broth 2/3 cup
- Toasted sesame seeds 1 tsp
Cooking Instructions
Step 1
First, prepare the radish salad that has developed a slight off-odor. Even wilted or slightly smelly radish salad can be revived with this recipe.
Step 2
Place the prepared radish salad into a pot. Add minced garlic (though not included in the original ingredients, adding it to taste will enhance the flavor), 2 Tbsp of plum extract, and 2 Tbsp of perilla oil. Mix everything thoroughly to ensure the ingredients are evenly distributed.
Step 3
Pour in 2/3 cup of anchovy broth and begin heating over medium heat. Once the broth comes to a rolling boil, reduce the heat to low, cover the pot, and let it steam gently for about 10-15 minutes. It’s important to simmer until the liquid becomes slightly reduced and thick.
Step 4
As it steams, you’ll notice the color of the radish salad gradually deepening. Initially, there will be plenty of liquid from the radish itself, but as it simmers on low heat, the moisture evaporates, concentrating the flavors.
Step 5
Continue to cook until only a little bit of liquid remains at the bottom of the pot. This indicates it’s done. Finally, sprinkle 1 tsp of toasted sesame seeds on top for a nutty aroma and finish. Isn’t it simple? The ingredients are minimal, making it an easy dish to prepare.
Step 6
The radish salad with the off-odor has been perfectly transformed into a savory and delicious ‘Steamed Radish Delight’! Enjoy its clean, pleasant taste without any unpleasantness. This method can also be used similarly to make Steamed Kimchi Filling or for stewing aged kimchi. If you wish to add pork, first stir-fry the pork until cooked, then add the kimchi and sauté before proceeding with the same steaming process. With warm rice, dried seaweed (like gim), and this Steamed Radish Delight, a satisfying meal is complete. Try wrapping rice and the steamed radish salad in a sheet of dried seaweed for a delicious bite!
