Essential Ingredients
  • 1 can Saury (packed in water or oil)
  • 1 Potato (medium-sized)
  • 2 Tomatoes (ripe)
  • A small amount of Cabbage
  • 20cm length Green Onion
  • 600ml Rice Water (or Anchovy-Kelp Broth)
  • 2 pieces Dried Kelp (5cm x 5cm)

Seasoning Ingredients
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1/4 tsp Minced Garlic

Optional Ingredients
  • 1 Tbsp Gochugaru (red pepper flakes)
  • 1 Cheongyang Pepper (or other hot chili pepper, thinly sliced)

Cooking Instructions

Step 1

First, let’s prepare the vegetables for the stew. Peel the potato and cut it into 1.5cm thick pieces. Remove the stem from the tomatoes and cut them into large wedges (2-3 pieces each). Chop the green onion into bite-sized pieces. Having everything prepped will make the cooking process much smoother.

Step 2

Now, let’s start cooking the stew. Pour 600ml of rice water into a pot. Add the 2 pieces of kelp (rinsed), the prepared tomatoes, and potatoes. Bring it to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 10-15 minutes, or until the potatoes are tender. You can remove the kelp once the potatoes are partially cooked.

Step 3

Once the potatoes are almost cooked through, stir in 1 tablespoon of gochujang to create the stew’s savory base. Mix it well and let it simmer for a few more minutes to allow the flavor of the gochujang to meld into the broth. Taste and adjust the seasoning with a little salt or soy sauce if needed.

Step 4

It’s time to add the saury and cabbage to complete the stew. Drain most of the liquid from the saury can and break the saury into 2-3 large pieces, then add them to the pot. Add the cabbage, cut into bite-sized pieces, as well. Gently simmer for about 5 minutes, stirring carefully to avoid breaking up the saury.

Step 5

Finally, add the minced garlic (1/4 tsp) and the chopped green onion for extra aroma and flavor. If you prefer a spicier stew, now is the time to add 1 tablespoon of gochugaru and the sliced cheongyang pepper. Simmer for another minute or two until everything is well combined.
