Main Ingredients
- 2 Cucumbers
- 10 Cherry Tomatoes (more than 10 if they are small)
- 1 Onion (approx. 780g)
Cooking Instructions
Step 1
First, wash the cucumbers and onion thoroughly. Cut the cucumbers in half, remove the seeds, and thinly slice them into strips. Thinly slice the onion as well. Place the prepared cucumber and onion in a bowl, add 3 teaspoons of salt and 1 teaspoon of soy sauce for soup, and gently mix them together. Let them sit for a moment. This process helps to draw out moisture from the vegetables, enhancing their crisp texture.
Step 2
To the marinated vegetables, add 5 tablespoons of plum extract for the base flavor and 7 tablespoons of vinegar for a pleasant sourness. These two ingredients will combine to elevate the overall taste of the cold soup.

Add 1 packet of vegetable broth powder for added umami and depth, along with 3 tablespoons of allulose for a smooth sweetness. If you don’t have allulose, you can substitute it with sugar. Stir everything until well combined.
