- 1 block firm tofu (approx. 300g)

- 1/2 Tbsp whole grain mustard
- 1 pinch fine salt

Cooking Instructions
Step 1
Blanch Tofu: Briefly blanch the tofu in boiling water for about 1 minute, then rinse under cold water and pat dry to remove excess moisture. (Tip: If you’re short on time, you can simply soak the tofu in warm water for about 5 minutes, then rinse it under cold water. This helps to firm up the tofu and make it easier to slice without breaking.)
Step 2
Make the Dressing: In a small bowl, combine the olive oil, sugar, lemon juice, whole grain mustard, salt, parsley flakes, and pepper. Whisk vigorously until well combined and emulsified. (Tip: If you prefer a sweeter taste, add a little more sugar. For extra tanginess, increase the lemon juice slightly. Ensuring all ingredients are thoroughly whisked together creates a smooth, cohesive dressing.)
Step 3
Slice the Ingredients: Remove the stem from the tomatoes and slice them into uniform rounds, about 0.8 cm thick. Similarly, carefully slice the blanched tofu into pieces of the same thickness as the tomatoes.

Assemble and Dress: Arrange the tomato and tofu slices on a serving plate, alternating them for an appealing presentation. Drizzle the prepared dressing evenly over the assembled Caprese. (Tip: For an enhanced flavor and elegant finish, you can optionally drizzle a little balsamic glaze or balsamic cream over the top. This step is optional.)
