Ingredients

  • 1 block Tofu
  • 12 Shrimp
  • 2 Eggs
  • 1 Tbsp minced garlic
  • 3-4 Scallions, chopped
  • 1/2 cup (100ml) Water

Slurry (for thickening)

  • 1 Tbsp Cornstarch
  • 1.5 Tbsp Water

Seasoning

  • 2 Tbsp Soy sauce
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Fish sauce
  • 1 Tbsp Corn syrup (or honey)
  • 1/2 Tbsp Gochujang (Korean chili paste)
  • Pinch of black pepper
  • 1 tsp Sugar
  • 1 Tbsp Vinegar

Cooking Instructions

Step 1

Cut the tofu into bite-sized pieces, about 1.5cm thick. Lightly season the tofu pieces with 3-4 pinches of salt and a dash of black pepper. Let it sit for about 5 minutes to absorb the flavors.

In a bowl, whisk together 2 eggs, 3-4 pinches of salt, and 1 tsp of sesame oil until well combined. The sesame oil adds a lovely nutty aroma and helps to neutralize any eggy smell.

Dip the seasoned tofu pieces into the egg mixture, ensuring they are evenly coated on all sides. Gently toss them to make sure the egg batter adheres well.

Heat a non-stick pan over medium-low heat and add some oil. Carefully place the egg-coated tofu pieces into the hot pan. Pan-fry them until golden brown and slightly crispy on both sides, about 3-4 minutes per side. Once cooked, remove the tofu from the pan and set aside.

Add a little more oil to the same pan over medium heat. Add 1 Tbsp of minced garlic and sauté for about 30 seconds until fragrant. Then, add the shrimp and stir-fry until they turn pink and are cooked through. (Optional: If you like a bit of spice, you can add sliced chili peppers here and stir-fry them with the shrimp).

Once the shrimp are nearly cooked, pour in all the prepared seasoning ingredients: 2 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp fish sauce, 1 Tbsp corn syrup, 1/2 Tbsp gochujang, 1 tsp sugar, and a pinch of black pepper. Bring the sauce to a boil over high heat and let it bubble for a minute until it starts to thicken slightly.

Return the pan-fried tofu to the pan with the sauce and shrimp. Gently toss everything together to coat the tofu evenly with the delicious sauce. Pour in 1/2 cup (100ml) of water to create a nice saucy consistency. This will help the tofu absorb even more flavor.

In a small bowl, whisk together 1 Tbsp cornstarch and 1.5 Tbsp water to create a slurry. Gradually pour this slurry into the simmering sauce while stirring continuously until the sauce reaches your desired thickness. Finally, stir in 1 Tbsp of vinegar for a touch of tanginess. Garnish with chopped scallions and optional chili peppers for a beautiful presentation and an extra burst of flavor. Your delicious Tofu and Shrimp Stir-fry is ready!
