I found some leftover mustard greens (Gat Kimchi) from my mom in the kimchi refrigerator. They were a bit too fermented to eat as is, so I decided to revive them by making this simple Toasted Mustard Greens dish with fragrant perilla oil. This recipe brings out a wonderful nutty aroma and savory flavor, making it a perfect side dish.

Main Ingredients

  • 1 cup Ggat Kimchi (mustard greens kimchi), rinsed and chopped
  • 1/2 stalk scallion, finely chopped
  • 1/2 red chili pepper, seeds removed and finely chopped
  • 200ml anchovy broth (or kelp broth)

Seasoning Ingredients

  • 3 Tbsp perilla oil (generous amount)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sugar (adjust according to the kimchi’s sourness)
  • A pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, gently rinse off the excess seasoning from the Gat Kimchi. Be careful not to wash too vigorously, as this can diminish the kimchi’s flavor. Squeeze out any excess water thoroughly. Chop the kimchi into bite-sized pieces for easier cooking.

Heat 2 tablespoons of perilla oil in a pan over medium-low heat. Add 1 tablespoon of minced garlic and stir-fry until fragrant and lightly golden, being careful not to burn the garlic. This creates a flavorful garlic-infused oil.

Add the rinsed and chopped Gat Kimchi to the pan and stir-fry until it softens slightly. Then, add the chopped scallions, red chili pepper, and 200ml of anchovy broth. Bring the mixture to a simmer, ensuring the liquid covers most of the ingredients.

Reduce the heat to medium and let it simmer until the broth has reduced considerably. Once the liquid has thickened and coated the ingredients, stir in 1/2 tablespoon of sugar and the remaining 1 tablespoon of perilla oil. Continue to stir-fry until the liquid has almost completely evaporated and the ingredients are glossy.

Turn off the heat once the sauce has thickened and the flavors have melded. Transfer the Toasted Mustard Greens to a serving dish. Garnish with a sprinkle of toasted sesame seeds for added aroma and texture. This delicious dish is best served warm with a bowl of steamed rice.
