Ingredients
  • 300g burdock root
  • 100g mayonnaise
  • 1.5 Tbsp sesame seeds
  • 1.5 Tbsp black sesame seeds
  • 1 Tbsp vinegar
  • 1 Tbsp allulose or corn syrup

Cooking Instructions

Step 1

Prepare the fresh burdock root by washing it thoroughly. Slice it thinly, about 3mm thick. Place the sliced burdock in a pot with 2 cups of water and 1 tablespoon of vinegar, bring to a boil, then add the burdock and blanch for 5 minutes. (Tip: Blanching in vinegar water helps prevent browning and maintains a crisp texture!) Rinse the blanched burdock under cold running water 2-3 times and drain well. Arrange the burdock in a steamer basket without overlapping. Add a pinch of salt to the boiling water and steam for 5 minutes. Be careful not to overcook it until mushy.

Step 2

While the burdock is steaming, let’s make the delicious sauce! Using a sesame grinder, finely grind 1.5 tablespoons each of sesame seeds and black sesame seeds. A blender or mortar and pestle also works. In a wide bowl, combine the ground sesame seeds, 100g mayonnaise, 1 tablespoon vinegar, and 1 tablespoon allulose or corn syrup. Mix everything thoroughly until well combined. You can adjust the sauce consistency by adding more or less mayonnaise.

Step 3

Once the burdock is steamed, carefully remove it from the steamer and let it cool slightly. It’s best to mix it when it’s warm, not too hot and not completely cold. Transfer the slightly cooled burdock to the bowl with the prepared sauce. Gently toss the burdock to coat it evenly with the sauce, taking care not to break the pieces. Once all the burdock is coated, your nutty and crunchy Toasted Black Sesame Burdock Salad is ready! It’s delicious served immediately, or chilled from the refrigerator for a refreshing twist.
