Inspired by Ryu Soo-young’s recipe from ‘Stars’ Top Recipe Show’, this Daepe Pork Belly Jeon is a fantastic accompaniment to spicy noodle dishes like Buldak Bokkeummyeon. The thinly sliced pork belly fries up incredibly crispy, making for a delightful textural contrast. Enjoy this simple yet impressive dish at home!

Ingredients

  • 500g thinly sliced pork belly (Daepe Samgyeopsal)
  • Pancake flour (or all-purpose flour), as needed
  • 5 large eggs
  • Cooking oil, as needed

Cooking Instructions

In a wide bowl, crack 5 eggs. Whisk them thoroughly with a fork or whisk until the yolks and whites are well combined and smooth. This is your egg wash.

You’ll be using 500g of thinly sliced pork belly, which is a generous portion for a family of four. If your pork belly is frozen, let it thaw slightly. Carefully separate each slice of the rolled pork belly. Separating the slices ensures even cooking and a better texture.

In another wide dish, prepare a sufficient amount of pancake flour. Take each separated slice of pork belly and dredge it in the flour, coating both sides evenly. Aim for a thin layer of flour.

It’s helpful to flour the pork belly in batches as you plan to cook them, rather than doing all of it at once. This prevents the flour from becoming clumpy and ensures a better coating for each piece.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Dip the floured pork belly slices into the prepared egg wash, ensuring both sides are well-coated. Carefully place the egg-coated pork belly onto the hot pan and fry until golden brown on both sides. Maintain medium heat throughout the cooking process to prevent burning.

Because the pork belly slices are thin, they cook very quickly. Flip them as needed to achieve a beautiful golden-brown color on both sides. The key is to get them crispy on the outside while remaining tender inside.

Once beautifully fried to a golden crisp, transfer the jeon to a plate lined with paper towels or kitchen parchment to drain any excess oil. Arrange them attractively on a serving dish. These jeon are absolutely delicious when served alongside spicy Buldak Bokkeummyeon, sweet and tangy Bibim-myeon (Korean spicy mixed noodles), or hearty Bibim Guksu (spicy mixed noodles).
