Main Ingredients- 350g Pork (e.g., thinly sliced for bulgogi, or belly, your preference)
- 1.5 handfuls of Bean Sprouts (approx. 150g)
- 1/4 stalk of Green Onion
- 1/2 Green Chili Pepper (optional, for added spice)
- 1 Tbsp Cooking Sake (to remove pork odor)
- A pinch of Black Pepper
Sauce Mixture- 1 Tbsp Soy Sauce
- 1.5 Tbsp Oyster Sauce
- 1 Tbsp Worcestershire Sauce
- 1 tsp Minced Garlic
- 1 Tbsp Sugar
- 1 Tbsp Soy Sauce
- 1.5 Tbsp Oyster Sauce
- 1 Tbsp Worcestershire Sauce
- 1 tsp Minced Garlic
- 1 Tbsp Sugar
Cooking Instructions
Step 1
First, thinly slice the green onion on an angle. Slicing them too thinly might cause them to become mushy during stir-frying, so aim for a moderate thickness.
Step 2
Finely mince the green chili pepper after removing the seeds. You can increase the amount if you enjoy spicy food, or omit it if you prefer less heat.
Step 3
Cut the pork into bite-sized pieces. If they are too large, they will take longer to cook, so cutting them to a manageable size will make cooking easier.
Step 4
Place the prepared pork into a dry, unheated pan and cook over medium-low heat until lightly browned. Cooking the pork in its own rendered fat without adding extra oil results in a cleaner, less greasy dish.
Step 5
As the pork begins to cook, add the minced garlic and stir-fry until fragrant.
Step 6
Add 1 tablespoon of cooking sake to help eliminate any pork odor and enhance the flavor as you continue to stir-fry.
Step 7
Sprinkle with a pinch of black pepper to further counteract any gamey smells. Stir everything together and continue to cook until the pork is nicely browned and golden. Be mindful of the heat to prevent burning.
Step 8
The key to this dish is to cook the pork until all its moisture has evaporated and the exterior is thoroughly browned and slightly crisp. This step is crucial for achieving a great texture and rich pork flavor.
Step 9
Once the pork is over 90% cooked, add 1 tablespoon of sugar. Drizzle it around the edges of the pan and let it caramelize slightly as you stir. This will add a deep sweetness and complexity.
Step 10
Add 1 tablespoon of soy sauce, pouring it along the sides of the pan to maximize its aroma.
Step 11
Quickly stir everything together after adding the soy sauce to coat the pork evenly. Avoid overcooking at this stage, as it can burn.
Step 12
Add 1.5 tablespoons of oyster sauce for an extra layer of savory depth.
Step 13
Pour in 1 tablespoon of Worcestershire sauce to further enhance the overall flavor profile and mix well.
Step 14
Once the pork has absorbed some of the sauce, add the prepared green chili pepper and green onion. From this point onwards, turn the heat up to high and stir-fry rapidly to prevent any excess moisture from forming and to maintain the crispness of the vegetables.
Step 15
Immediately add the thoroughly washed bean sprouts. Bean sprouts cook very quickly, so adding them last is essential to keep them crisp.
Step 16
Stir-fry the bean sprouts briefly over high heat, just until they start to wilt slightly, then immediately turn off the heat. Overcooking will make the bean sprouts soggy.
Step 17
Your delicious Pork and Bean Sprout Stir-Fry is ready! Serve it over warm rice for a hearty meal or enjoy it as a side dish.
