Stew Ingredients

  • Radish 400g (approx. 1/3 medium radish)
  • Beef (for stew) 150g
  • Water 4 cups (800ml)
  • Soy sauce for soup or salt to taste

Radish Seasoning

  • Miso paste 2 Tbsp
  • Red pepper flakes 1 Tbsp
  • Minced garlic 1 Tbsp
  • Water 6 Tbsp

Cooking Instructions

Step 1

First, prepare all the ingredients for the stew. Wash the radish thoroughly and pat the beef dry with paper towels to remove any excess blood.

Slice the radish thinly, about 0.5cm thick, or julienne it into fine strips. Thinly sliced radish is key for the stew to absorb flavors well and cook faster, making it more delicious! (Note: The radish I used today was a bit thick, so it might take a little longer to cook.)

In a bowl, combine the miso paste (2 Tbsp), red pepper flakes (1 Tbsp), minced garlic (1 Tbsp), and water (6 Tbsp). Mix well to create the seasoning paste.

Add the seasoning paste to the thinly sliced radish and gently mix with your hands until the radish is evenly coated. Ensuring the radish is well-marinated is crucial for flavor.

Pour 4 cups of water into a pot. Add the beef (drained of blood) and bring to a boil over high heat. Once boiling, reduce the heat to medium and cook the beef.

Once the beef is partially cooked, add the seasoned radish to the pot. Let it simmer together until the radish becomes translucent and tender. Cook over medium-low heat until well-stewed. (Adjust cooking time based on the thickness of your radish.)
