  • 6 Tbsp cooking wine (mirin or cheongju)
  • 3 Tbsp honey (for glaze and sweetness)
  • 2 Tbsp minced garlic
  • Sesame oil, to taste
  • Toasted sesame seeds, to taste
  • Black pepper, to taste

Side Dishes: Crispy Bean Sprouts & Aromatic Spring Greens

  • 1 bag bean sprouts
  • 2 Tbsp anchovy sauce (for umami)
  • Sesame oil, to taste
  • Toasted sesame seeds, to taste
  • Assorted spring greens (prepared to your liking)

  • 1 whole fish, cleaned
  • Cooking oil, for pan-frying

Hearty Addition: Warm Loach Soup

  • Prepared loach soup (to your preference)

Cooking Instructions

[Preparing Bulgogi Vegetables] First, let’s prepare the vegetables for marinating the beef. Slice the onion into thin strips and the carrot into half-moon shapes. Finely chop the Korean green chili peppers, removing the seeds if you prefer less heat. (You can adjust the amount or omit them if you don’t like spicy food.)

Peel the kiwi, apple, and pear, then grate them or blend them into a smooth puree. Using fruit in the marinade makes the meat incredibly tender and adds a natural sweetness. In a bowl, combine the thinly sliced beef with the pureed fruit, soy sauce, cooking wine, honey, minced garlic, and black pepper. Gently mix everything together to ensure the beef is evenly coated. Let it marinate for at least 30 minutes. For even deeper flavor, marinate in the refrigerator for an hour or longer.
