Baek Father’s Kimchi Fried Rice: A Unique Recipe That Guarantees Deliciousness with Every Follow

Essential Ingredients- 1 bowl of warm cooked rice (approx. 200g)
- 100g Spam or Luncheon Meat
- 1 fresh egg
- A little chopped green onion
- 1 paper cup of well-fermented kimchi (approx. 150g)
- 2 Tbsp Soy Sauce (30ml)
- 1/2 Tbsp Sugar (5g)
- 5 Tbsp Water (75ml)
- 2 Tbsp Cooking Oil (30ml)
- 1/2 Tbsp Fine Red Pepper Flakes (3g)
Cooking Instructions
Step 1
First, place 100g of Spam (or luncheon meat) in a zip-top bag. Use a rolling pin or your hands to firmly mash it into fine pieces. Be careful, pressing too hard can tear the bag! Cut the kimchi, measured in a paper cup, into bite-sized pieces using scissors. If your kimchi is too sour, you can adjust the sugar amount slightly.
Step 2
Heat 2 Tbsp of cooking oil in a frying pan, then add the mashed Spam and sauté until golden brown. The fat from the Spam will render out and add wonderful flavor.
Step 3
Once the Spam is somewhat browned, push the ingredients to one side of the pan. In the empty space, add 2 Tbsp of soy sauce and 1/2 Tbsp of sugar and let it bubble slightly. Once the soy sauce starts to sizzle, mix it with the Spam and continue to stir-fry. This step allows the deep flavor of the soy sauce to infuse into the Spam.
Step 4
Add the chopped kimchi and 1/2 Tbsp of fine red pepper flakes. Stir-fry everything together with the Spam and soy sauce mixture until well combined. Once the kimchi is tender, pour in 5 Tbsp of water to add moisture and help the ingredients meld together as you continue to cook.
Step 5
When the moisture in the kimchi fried rice has slightly reduced, turn off the heat for a moment. Add 1 bowl of warm cooked rice and gently mix with a spatula, ensuring each grain of rice is coated with the flavorful mixture. Once the rice and ingredients are well combined, turn the heat back on and stir-fry until the rice grains are distinct and fluffy. For an extra touch of flavor, you can drizzle a little sesame oil at the end, if desired.
