Main Ingredients

  • Pork belly 800g
  • 3 Peperoncino peppers (optional, for a touch of spice)
  • 40 whole garlic cloves

Sauce Ingredients

  • 2.5 Tbsp Soy sauce (for seasoned dishes)
  • 1 Tbsp Steak sauce
  • 1 Tbsp Tonkatsu sauce
  • 2 Tbsp Oligodang (corn syrup or rice syrup)
  • 1 Tbsp Oyster sauce
  • 1 Tbsp Sesame oil

Cooking Instructions

Step 1

First, heat a pan over medium heat and grill the pork belly, cut into bite-sized pieces, until it’s golden brown and slightly crispy. This allows the fat to render out, making it extra delicious.

Once the pork belly is about half-cooked, carefully drain most of the rendered fat from the pan using a paper towel. Remove the pork belly from the pan and let it cool slightly. Then, cut it into your desired bite-sized pieces (about 2-3 cm).

Using the same pan with the pork belly drippings (reduce heat to very low), add the whole garlic cloves and sauté them gently. It’s important to cook the garlic slowly without burning it to bring out its natural sweetness and aroma.

When the garlic cloves are lightly golden and fragrant, turn off the heat. Add all the sauce ingredients (soy sauce, steak sauce, tonkatsu sauce, oligodang, oyster sauce) to the pan. Do not add the sesame oil yet.

Now, turn the heat back to medium. Stir everything together well, ensuring the sauce coats the pork belly and garlic evenly. Continue to cook, stirring frequently, until the sauce slightly thickens and coats the pork belly with a beautiful glaze.

Finally, turn off the heat. Drizzle in the sesame oil for that finishing touch of nutty aroma and stir to combine. Your delicious Glazed Pork Belly is ready! Serve it warm, perhaps over a bed of fluffy rice, for a truly satisfying meal.
