Ingredients
  • 5 Tbsp perilla seed powder
  • 1 shiitake mushroom
  • A little carrot
  • A little zucchini
  • 1/4 onion
  • 1 serving fresh kalguksu noodles
  • 1/2 tsp salt
  • 1 tsp soy sauce (for soup)
  • 700ml anchovy-kelp broth (or water)

Cooking Instructions

Step 1

First, prepare the shiitake mushroom by removing the tough stem and slicing it thinly. Thinly slice the zucchini into half-moons.

Step 2

Julienne the carrot and onion as well. Slicing all the vegetables to a similar thickness will help them cook evenly.

Step 3

In a pot, combine 700ml of anchovy-kelp broth (or water), 1/2 tsp of salt, and 1 tsp of soy sauce for soup. Add all the prepared vegetables (shiitake mushrooms, zucchini, carrots, and onion) and bring to a rolling boil.

Step 4

While the broth is boiling, gently rinse the fresh kalguksu noodles under running cold water to remove excess starch. This step prevents the noodles from sticking together and keeps the broth clear.

Step 5

Once the broth with the vegetables is boiling vigorously, taste it and adjust seasoning with more salt or soy sauce if needed. Add the prepared kalguksu noodles and gently loosen them with chopsticks to prevent clumping.

Step 6

Check if the noodles are cooked through. Then, stir in the 5 Tbsp of perilla seed powder, ensuring it dissolves smoothly without lumps. Continue to simmer until the soup reaches your desired creamy consistency. Your delicious and rich perilla seed noodle soup is ready to be enjoyed warm!
