The Guilt-Free, Clean Diet Risotto

As I’m currently preparing for my body profile photoshoot, I’ve been experimenting with various diet recipes! Today, I want to share a diet risotto recipe that’s not only light but also helps you get your protein in. I’ve used sirloin for protein, but if you’re concerned about the fat content and calories, I highly recommend substituting it with shrimp, especially if you don’t exercise intensely. It’s not always about low sodium; you don’t need to worry about generously seasoning with salt when it’s time to flavor!

Ingredients

  • 1/2 bowl of brown rice
  • 1 pack of plain soy milk
  • 1 slice of low-sodium cheese
  • 1/2 onion
  • 1 king oyster mushroom
  • 5-6 slices of sirloin (or shrimp)
  • Pinch of salt
  • Pinch of pepper
  • Pinch of parsley

Cooking Instructions

Step 1

Finely mince the onion and king oyster mushroom. This step is crucial for a smooth texture and to ensure the flavors meld beautifully into the risotto.

Step 2

Heat a non-stick pan over medium heat and add a drizzle of olive oil. Add the minced onion and sauté until it becomes translucent and slightly golden brown, releasing its sweet aroma. Be careful not to burn it.

Step 3

Once the onions are fragrant and starting to caramelize, add the minced king oyster mushrooms. Continue to sauté together with the onions until the mushrooms have released their moisture and are lightly browned.

Step 4

Pour in the plain soy milk and add the slice of cheese. Stir continuously over low heat until the cheese has melted completely and the mixture has thickened into a creamy risotto consistency. Keep stirring to prevent sticking.

Step 5

Season the risotto with salt and pepper to taste. Don’t be afraid to season generously; proper seasoning is key to a delicious risotto, even on a diet!

Step 6

Once the risotto has reached your desired consistency, transfer it to a serving bowl. Grill the sirloin slices (or cook the shrimp) until perfectly done, and then place them on top of the risotto. This is the final touch!

Step 7

Garnish with a pinch of dried parsley if you have it. This adds a lovely touch of color and fragrance, but it can be omitted if unavailable. Enjoy your healthy and delicious meal!
