Main Ingredients- 2 large eggs
- 1 small handful soaked dangmyeon noodles (approx. 50g)
- A little carrot (finely minced)
- A little green onion (finely minced)
Seasoning- A pinch of salt (to taste)
- A pinch of black pepper (to taste)
- A pinch of salt (to taste)
- A pinch of black pepper (to taste)
Cooking Instructions
Step 1
First, soak the dangmyeon noodles in warm water for about 30 minutes until pliable. Once soaked, drain them thoroughly in a sieve and transfer to a large bowl. Use kitchen scissors to snip the noodles into bite-sized pieces. This makes them easier to mix with the egg mixture and handle while cooking.
Step 2
Wash the carrot, peel it, and finely mince it. Wash the green onion, thinly slice the white parts, and mince them finely as well. Mincing the vegetables this finely makes it easier for children to enjoy them.
Step 3
Add the finely minced carrot and green onion to the bowl with the dangmyeon. Crack in the 2 fresh eggs. Finally, season with a pinch of salt and pepper. Adjust the amount of salt and pepper to your preference. It’s best not to over-salt them, especially for children’s meals.
Step 4
Mix all the prepared ingredients thoroughly using a spoon or spatula. Ensure the dangmyeon noodles are not clumped together and are well combined with the egg and vegetables for an even texture.
Step 5
Heat a pan over low heat. Add a generous amount of cooking oil. Scoop spoonfuls of the mixture and spread them into round shapes on the pan. It’s best to make them not too thick, so they are easy for children to eat in one bite. Cooking them slowly over low heat ensures they cook through evenly.
Step 6
Once the bottom is golden brown, carefully fold each pancake in half to create a semi-circular shape. Folding them in half helps them cook through better and makes for a more appealing presentation that kids will love. Cook until both sides are golden and crispy. Your delicious Dangmyeon Egg Pancakes are ready! Serve them warm and enjoy.
