Main Ingredients
- 1 serving of warm cooked rice
- 3 fresh white shrimp
- 3 cloves garlic
- 1/4 stalk green onion (scallion)
- 1 egg
- A little cooking oil
- 1 Tbsp oyster sauce
- A little sesame oil
- A little dried parsley (for garnish)
- 1 pinch salt
Cooking Instructions
Step 1
Heat 1 Tbsp of cooking oil in a pan. Whisk the egg with a pinch of salt and make soft scrambled eggs. Remove the cooked eggs to a separate bowl and let them cool. It’s best to cook over medium-low heat to prevent the eggs from burning.
Step 2
Thinly slice the garlic and finely chop the green onion, including the white parts. Add enough cooking oil (2-3 Tbsp) to the pan. Slowly sauté the sliced garlic and chopped green onion over medium-low heat until fragrant. Be careful not to burn the garlic; sautéing until it turns a light golden color is the secret to enhancing its flavor.
Step 3
Once the garlic starts to turn golden, add the prepared shrimp and stir-fry together. The shrimp will turn pink as they cook. At this point, you can add finely chopped onion if you like, which adds sweetness and texture. Continue to stir-fry for another 1-2 minutes until the shrimp, garlic, and green onion are well combined.

Add the 1 serving of warm cooked rice to the stir-fried ingredients. Using a spatula, gently break apart any clumps of rice and stir-fry until fluffy. It’s important to stir-fry the rice until it’s separated and coated with the seasonings.

Once the rice is sufficiently stir-fried and mixed with the ingredients, pour 1 Tbsp of oyster sauce around the edges of the pan and quickly mix it with the rice.
