Main Ingredients
  • 1/2 Onion, thinly sliced
  • 1 Tbsp Minced Garlic
  • 2 Cups Ground Pork (approx. 300-350g)
  • 2 Bowls Cooked Rice, warm
  • 2 Handfuls Spinach, washed and drained
  • 1 Red Chili Pepper, deseeded and thinly sliced diagonally (for garnish and flavor)
  • 2 Eggs, for frying
  • 1 Tbsp Cooking Oil

Seasoning
  • 1 Tbsp Fish Sauce
  • 1 Tbsp Oyster Sauce
  • 1 tsp Sugar
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Heat a large pan over medium heat and add 1 Tbsp of cooking oil. Add 1 Tbsp of minced garlic and stir-fry for about 30 seconds until fragrant, creating infused garlic oil. Be careful not to burn the garlic.

Step 2

Once the aromatic garlic oil is ready, add 2 cups of ground pork. Break up any clumps with a spatula and stir-fry until the pork is no longer pink and is lightly browned. Ensure it’s cooked through.

Step 3

When the pork is well-cooked, add the thinly sliced 1/2 onion. Stir-fry together until the onion becomes translucent. The onions will soften and release their natural sweetness, balancing the dish.

Step 4

Now it’s time to season. Push the ingredients to one side of the pan and add 1 Tbsp fish sauce, 1 Tbsp oyster sauce, 1 tsp sugar, and a pinch of black pepper. Stir everything together well to combine the flavors. The mixture should become glossy and fragrant.

Step 5

Add the 2 handfuls of washed and drained spinach. Spinach wilts very quickly, so stir-fry it just until it softens and turns bright green. Avoid overcooking to maintain its freshness and color.

Step 6

Finally, add the thinly sliced 1 red chili pepper and toss gently to combine. The chili adds a touch of heat and a vibrant splash of color. You can adjust the amount or omit it if you prefer.

Step 7

Serve the flavorful Thai-style pork mixture generously over 2 bowls of warm cooked rice. Top each serving with a freshly fried egg. The runny yolk will mix beautifully with the savory sauce, creating an even richer taste. Enjoy your homemade Thai feast!
