  • Ingredient Category : Beef
  • Occasion : Entertaining / Guests
  • Cooking : Grilled / Roasted

  • Cooking Time : Within 30 minutes
  • Difficulty : Intermediate

Main Ingredients

  • 400g premium beef tenderloin

Seasoning & Marinade

  • Pinch of fine sea salt (adjust to taste)
  • Pinch of freshly ground black pepper
  • 2 Tbsp extra virgin olive oil
  • A handful of fresh herbs (rosemary, thyme, etc.), chopped or whole

Cooking Instructions

Step 1

Prepare your premium beef tenderloin for steak. Remove it from the refrigerator about 30 minutes to 1 hour before cooking to allow it to come to room temperature. This helps the steak cook more evenly. Gently pat dry any surface moisture with paper towels.

Step 1

Step 2

Season the tenderloin generously on all sides with fine sea salt and freshly ground black pepper. Drizzle the olive oil evenly over the steak, ensuring the seasoning adheres well.

Step 2

Step 3

Arrange the fresh herbs on top of the steak, or mix chopped herbs with olive oil and rub it all over. The herbs will infuse a wonderful aroma and flavor into the meat. Let it marinate for about 15-20 minutes.

Step 3

Step 4

Heat a heavy-bottomed skillet or cast-iron pan over high heat until very hot. Carefully place the steak in the hot pan. Sear each side for about 1 minute 30 seconds to 2 minutes, until a beautiful, deep brown crust (Maillard reaction) forms. This seals in the juices. Adjust the searing time based on your desired doneness (e.g., 1 minute 30 seconds per side for medium-rare).

Step 4

Step 5

Remove the steak from the pan and transfer it to a plate or cutting board. Loosely tent it with aluminum foil and let it rest for 5-10 minutes. This resting period allows the juices to redistribute throughout the steak, resulting in a more tender and succulent bite. Serve with your favorite garnishes, such as roasted vegetables, mashed potatoes, or a fresh salad, for a complete and impressive meal.
