Ingredients- 150g blanched zucchini leaves
- 1/4 small onion
- 1 Tbsp ssamjang (Korean soybean paste for wraps)
- 1 Tbsp minced garlic
- 1 red chili pepper, finely chopped
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare 150g of blanched zucchini leaves. The blanching time isn’t fixed; it’s best to taste them and remove them when they reach your desired texture. Once blanched, thoroughly squeeze out any excess water from the zucchini leaves and spread them out loosely.
Step 2
Chop the spread-out zucchini leaves into bite-sized pieces. You can chop them finely like other leafy greens, or leave them slightly chunkier according to your preference.
Step 3
After chopping, the zucchini leaves might appear to be a larger volume than you initially thought. Transfer all the chopped zucchini leaves into a mixing bowl.

Now it’s time to mix in the seasonings. Add the chopped zucchini leaves to the bowl. Finely chop and add 1/4 small onion. Then, add 1 Tbsp of minced garlic, 1 finely chopped red chili pepper, 1 Tbsp of sesame oil, and 1 Tbsp of ssamjang. Mix everything together thoroughly with your hands until well combined. Using store-bought ssamjang is also perfectly fine and delicious. Zucchini leaves and ssamjang have a wonderful flavor synergy and nutritional compatibility.
